AHCC® (Active Hexose Correlated Compound) is a nutritional supplement derived from the mycelium of shiitake mushrooms. It is produced through a specialized cultivation and enzymatic modification process that results in a unique, standardized extract. AHCC® is noted for its polysaccharides, particularly alpha-glucans, which are not commonly found in other mushroom-based products. AHCC® was discovered by Japanese scientists after screening hundreds of mushroom species, to find those with potential to contribute to health. Following this study, scientists identified alpha-glucans – polysaccharides that naturally occur in small amounts in shiitake mycelia – as being some of the most outstanding compounds. (Note that this is in contrast to the fruiting body of the mushroom, which mainly contains beta-glucans.)

To increase the absorption and effectiveness of the alpha-glucans, Japanese scientists have designed a special patented production process that includes a fermentation step. During this process, the mycelia are grown in a liquid culture medium based on rice bran. During the fermentation process, the mycelia convert components of the medium into other nutrients. This process is long, taking about two months, but the final AHCC® (including partially acetylated alpha-glucans) possesses unique properties that have turned AHCC® into a widely used dietary supplement.

Indeed, AHCC® has been studied multiple times in both laboratory and clinical settings, where its potential has often been highlighted in relation to various health challenges. Today, its potential is supported by >30 scientific studies, including clinical studies in humans.
